Conversion of sorbitol in avocado:
Avocado are packed with healthy fats dietary fibers and other goodies that your body needs.
But it has sorbitol which cause adverse effect in human body after consumption like vomiting, blooting and other symptoms in sorbitol intolerance people.
So to make our product acceptable for every one we will convert sorbitol into fructose by adding an enzyme called sorbitol dehydrogenase
After conversion of sorbitol now we will ferment avocado .
Fermentation of avocado and applesauce;
Alcoholic fermentation is a biotechnological process accomplished by yeast, some kinds of bacteria, or a few other microorganisms to convert sugars into ethyl alcohol and carbon dioxide.
In this fermentation process, yeast is mostly used as a bio-culture .
In the alcoholic fermentation process, yeast generally carries out the aerobic fermentation process, but it may also ferment the raw materials under anaerobic conditions.
In the absence of oxygen, alcoholic fermentation occurs in the cytosol of yeast . Alcoholic fermentation begins with the breakdown of sugars by yeasts to form pyruvate molecules.
The two molecules of pyruvic acid are then reduced to two molecules of ethanol and 2CO2
Under anaerobic conditions, the pyruvate can be transformed to ethanol, where it first converts into a midway molecule called acetaldehyde, which further releases carbon dioxide, and acetaldehyde is converted into ethanol.
In alcoholic fermentation, the electron acceptor called NAD + is reduced to form NADH.

450g jar of luscious grace will cost almost 120 rupees . So if we sell it for rupees 210 it will cost us a fair profit of 50 percent .

As we all know that if we buy something in bulk amount we will eventually get discount per kg . But still if our product will get accepted in market I would like to grow my own fruit instead of buying it from market which will cause us more profit as compared to the profit w3e get from buy it from market
